If you’ve been keeping up with MasterChef then you said the ultimate air fryer challenge they did!

They had us drooling so we had to get our hands on Matt Landmark’s recipe for Nashville Fried Chicken with Ranch Sauce and Pickles.

Who doesn’t love some crispy fried chicken with a delectable sauce and crunchy pickles?!

Matt’s Nashville Fried Chicken with Ranch Sauce and Pickles

Ingredients
 
Buttermilk Marinade
1L cultured buttermilk
¼ cup cayenne pepper hot sauce
1 tbsp salt
1 tbsp chilli powder
1 tsp cayenne pepper
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
½ tsp ground white pepper
12 chicken wings

Coating
2 cups plain flour
1 tbsp salt
1 tbsp chilli powder
1 tsp cayenne pepper
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
½ tsp white pepper
canola oil spray

Quick Pickles
1 Lebanese cucumber
1 cup white vinegar
½ cup sugar
½ cup water
1 tbsp yellow mustard seeds
3 dill fronds
1 tbsp salt

Spiced Oil
1 tbsp brown sugar
2 tbsp cayenne pepper
2 tbsp chilli powder
1 tbsp paprika
½ cup canola or grapeseed oil

Spiced Seasoning
2 tbsp cayenne pepper
2 tbsp chilli powder
1 tbsp paprika
1 tsp vinegar powder
1 tsp salt

Buttermilk Ranch
1 cup cultured buttermilk
1 small bunch chives, finely chopped
¾ cup sour cream
¼ cup Kewpie mayonnaise
1 clove garlic, minced
1 tbsp Worcestershire sauce
1 tbsp dried dill
½ tsp salt
juice ½ – 1 lemon

Method

1. Heat air fryer to 200 degrees celsius.

2. For the Buttermilk Marinade, combine marinade ingredients in a bowl. Add chicken wings and toss through marinade until well coated. Set aside in the fridge for at least 20 minutes.

3. For the Chicken Coating, combine all ingredients in a bowl.

4. Remove chicken wings from marinade and toss in the chicken coating, ensuring they are completely covered. Shake to remove excess. Spray with canola spray and cook in the air fryer in batches, until tender and golden, about 20 minutes. Repeat with remaining chicken wings.

5. For the Quick Pickles, slice cucumber thinly and place into a bowl. Combine vinegar, sugar, and water in a small saucepan. Stir over medium heat until sugar dissolves. Allow to cool slightly then pour over the cucumbers and stir in mustard seeds, dill and salt. Set aside in the fridge to pickle.

6. For the Spiced Oil, combine sugar and spices in a stainless steel bowl.

7. Place oil into a small saucepan and heat until shimmering then pour over the spice mix. Reserve at room temperature until ready to serve.

8. For the Spiced Seasoning, combine spices in a small bowl and set aside.

9. For the Buttermilk Ranch, combine ingredients in a bowl, season with lemon juice and salt to taste. Transfer to a wide serving bowl.

10. To serve, drain pickles and transfer to a serving bowl. Remove chicken wings from the air fryer and immediately brush liberally with spiced oil. Dust wings liberally with spiced seasoning and arrange on a serving plate. Serve with buttermilk ranch for dipping.
