We are now convinced that Willy Wonka is working for Nestle.

In an attempt to fight obesity, Nestle has taken sugar, restructured it, and come up with a crazy new sugar.

“It is sugar, but it is assembled differently so it can disassemble easily in your mouth with less going into your gastrointestinal tract,” Dr. Stefan Catsicas, the company’s chief technology officer, said.

The international food heavyweight won’t go into the process but the idea is like this: normal sugar crystals are solid all the way through but the new sugar is more like a balloon, empty on the inside.

BUT, the reduction of actual sugar would also make the less sweet, right? Yeah, they’ve thought of that too.

This is the interesting bit – Nestle has reorganised the sugar molecules in a way that makes them dissolve faster in the mouth, triggering an immediate burst of sweetness to make up for the overall decreased amount of sugar.


The new sugar tricks your mouth into thinking the product containing the sugar is sweeter than it actually is—but less will go to your stomach and guts.

Sugar used in products could be reduced by as much as 40 per cent.
