Sweet Potato toast might sound a bit weird, but it’s seriously yummy. You need to pay attention when shopping for your sweet potatoes and make sure you pick a nice large round one as they work best.

Simply slice your sweet potato into 1/4 inch long vertical slices. You want to make sure it’s this size as thicker pieces won’t toast all the way through. 

You’ll need to turn your toaster all the way up to high and toast your slices at least twice. It might sound odd cranking the toaster up all the way, but trust me you need to. 

You can slice the whole sweet potato and store the extra pieces in a plastic bag to enjoy for the rest of the week. 

There are an endless combination of toppings you can choose from. If you’re after something savoury, try topping with a fired egg with a bit of chilli and salt and pepper. You can also top with black beans and cheese or even simply some parmesan cheese and fresh basil. 


If you’re after an extra sweet treat, try topping with peanut butter, banana and cinnamon. Nutella with fresh blueberries also tastes amazing.
