Ingredients:
500g lean diced pork
1 tblsp oil
300g stir fry vegetables (bok choy, brocolini, capsicum)
1 tblsp oil extra
3 spring onions, sliced diagonally
150mL ginger stir fry sauce
2 tblsp sliced pickled ginger
200g hokkien noodles
¼ cup chicken stock
2 tblsp toasted sesame seeds
Method:
Heat a wok or frying pan over high heat and stir fry diced pork for 4 – 5 minutes until browned. Remove and set aside.
Heat the extra oil in the wok and add the vegetables, stir frying for 2 minutes. Add the spring onions, sauce, noodles and chicken stock. Bring to the boil, tossing well.
Return the pork to the work and stir through, heating for a further 1 minute.
Serve pork and ginger stir fry noodles hot, garnished with toasted sesame seeds.
Notes: this stir fry is simple and delicious. Make it your own by changing the flavour of the stir fry sauce e.g. Mongolian, Thai basil, honey soy, plum.
